Ingredients:

  • 1 package of Tortillas La Penita
  • 2 cups shredded chicken
  • 1/2 onion (chopped)
  • 1/2 cup sour cream
  • 2 pounds of green tomato (tomatillo)
  • 2 serrano pepper
  • 1 clove garlic
  • 1 tablespoon of lard
  • 1/2 cup chicken broth
  • 1/2 cup queso fresco (Mexican cheese)
  • 1/4 lettuce (finely chopped)
Boil the green tomato and the peppers for about 10 minutes. Once they are cooked, we are going to make a salsa with the green tomato and peppers adding the garlic and 1/2 cup of water. In another pot, begin to heat up the lard over medium heat to later add the salsa and cook for 5 minutes. Add to the salsa, the 1/2 cup of broth, sprinkle of salt and continue cooking until thickened. Rapidly fry the Tortillas La Penita (not brown). Next, we will stuff the tortillas with chicken, roll up and fit on a plate (about 4-5 rolls). Finally, Bathe with green sauce and decorated with some lettuce, sour cream and cheese
